1. A grand Scottish Borders estate turned luxury hotel where you can fish for salmon in the morning, shoot clays in the afternoon, and end the day in a tartan-accented armchair with a glass of something peaty. The manor looks like it belongs to a duke, and it basically did. Guests tend to arrive in wellies or golf shoes, sometimes both.
