1. The Gibson Room

    American

    A black-walled room lit by candles and a glowing bar forms an unlikely stage for Michael Beltran's uncompromising cooking. Anchovy mousse fills the Caesar croutons; handmade agnolotti cradle venison bolognese; the schnitzel arrives plate-wide with salsa verde and a fried egg. The menu refuses easy categorization, and so does the place itself.
