1. The Sichuan spot in Chinatown that has tourists and locals alike waiting an hour just to get a table, which tells you everything. This is a full-on restaurant where the chile heat and numbing tingle of Sichuan peppercorns do serious work, and your lips will remind you about it for a while after. Get the Dungeness crab when it's in season and prepare to dig in with both hands. Spice-averse friends are not totally lost here, but they should know what they're walking into.
