    Texas-style Barbecue Beer Bar

    A proper Texas BBQ joint run by a former tech guy who clearly went too far down a rabbit hole and never came back. The brisket is the move, smoked low and slow until the bark is almost black and the inside melts. He drives an hour just to get the right bread for the chopped beef sandwich, which tells you everything about the obsession level here. The crowd is flannel-and-work-boots Fremont mixed with people who just Googled "best brisket Seattle."
