Chef Ashleigh Shanti runs a fish fry built around North Carolina catfish and dayboat shrimp, with the fish sandwich, dredged in locally milled cornmeal and finished with spiced buttermilk tartar sauce, drawing the most attention. The New York Times put it on their 2024 Restaurant List, and a James Beard semifinalist nod followed.
