The hotel occupies the upper floors of Mandalay Bay without sharing its casino floor, which is the whole point. Rooms run to desert-toned calm and Strip views; the private pool stays mercifully quiet by Vegas standards. This is a Mandalay Bay steakhouse where the bread basket has been replaced by complimentary duck fat fries, seasoned three ways and sent out with dips before you've touched the menu. The steaks get poached in butter before the grill, then arrive with red wine shallot butter. Tables near the entrance double as a front-row seat for convention badges rushing past, so dress for dinner and a little voyeurism.
