This is a Mandalay Bay steakhouse where the bread basket has been replaced by complimentary duck fat fries, seasoned three ways and sent out with dips before you've touched the menu. The steaks get poached in butter before the grill, then arrive with red wine shallot butter. Tables near the entrance double as a front-row seat for convention badges rushing past, so dress for dinner and a little voyeurism.
