This is a Piedmontese restaurant run entirely by women, serving two tasting menus and an à la carte that leans into meat the way the region always has, while also offering seafood for the unconvinced. The cooking is rooted in tradition but steered somewhere more contemporary, with seasonal ingredients doing most of the persuading.
