The ageing chamber visible from the dining room holds premium beef and ox, and it sets the tone for what follows. This is a grill restaurant attached to a roadside hotel a few miles south of Burgos, where the chef works the fire in full view on the à la carte side of the room. The other half runs a set menu. It's the kind of place where carnivores make detours off the motorway and leave looking satisfied and slightly stunned.
