Aburaya is a karaage shop in Oakland's Temescal that goes deep on one thing: thick boneless thighs marinated in shio-koji, dredged in potato starch for a crunch that actually holds. The seasonings and dipping sauces, garlic miso powder, sansho pepper, miso ranch, are where the kitchen puts its personality.
