A converted salt warehouse perched above salt pans that have been worked since ancient times, Almazen is a tasting-menu restaurant built around an open kitchen with a bar counter circling it. The chef cooks in plain sight, pulling from local organic produce and leaning hard on muera, the salt native to this valley. On fair days the meal opens outside, looking out over the mines, which sets the tone rather perfectly.
