Almú Tilcajete
Oaxacan
The kitchen runs on burning logs that cooks move by hand, which tells you most of what you need to know. This open-air countryside restaurant south of Oaxaca City sits inside an expansive shed ringed by plants, pottery, and sweet woodsmoke. The menu is classically Oaxacan, memelas, enmoladas draped in mole, tlayudas packed with local cheese, with tableside salsas that improve everything they land on. Getting here will make you question your navigation skills at least once.
