Perched above the Hawkesbury Valley inside a gated retreat, this degustation restaurant earns its two Chef Hats from the Australian Good Food Guide by building menus almost entirely from what grows or grazes within an hour's drive. Charcoal and fire do the cooking, indigenous ingredients flavour the plates, and the glass frontage frames a Sydney skyline edged by Blue Mountains ridgeline. Entry is by appointment only, which keeps the room quiet enough to hear yourself think.
