    A Michelin-starred contemporary restaurant in a village in the Benasque valley, where the kitchen leans on game and vegetables from its own garden, then runs them through old preservation techniques, curing, salting, escabeches, with a noticeably light hand. Two tasting menus anchor the experience. The family has been at it for generations, and the current siblings still cook and pour like they mean it.
