Exposed stone and old beams in a converted wine cellar at the foot of Pic Saint-Loup: a modern restaurant where the set surprise menu changes with the market and whatever came off the boats at Sète that morning. The team came up through serious kitchens but landed somewhere genuinely unpretentious, with farmhouse tables and a kitchen garden out back. The Hérault hills supply most of what ends up on the plate.
