A Michelin-starred restaurant hiding in a blink-and-miss-it village in the Basque mountains, ARREA! splits into three distinct spaces: a taberna to wait, a rustic room for the shorter market menu, and a main dining room for the full gastronomic ride. The chef's cooking leans hard into the surrounding landscape, with partridge, trout, pigeon, deer, wild boar, and foraged lichen doing most of the talking. Driving out this far is part of the point.
