Stone arches from a 16th-century palace stable frame the dining room at this Michelin-starred fine-dining restaurant in Sagunt's old town. Chef Vicky Sevilla opened it at 25 and has built a menu rooted in the local Valencian landscape, the name itself meaning "roots." Three tasting menus anchor the evening, with dessert served at a small island where you can watch the kitchen finish each plate.
