The dining room sits twenty metres underground in a 15th-century Mudejar wine cellar, all labyrinthine stone, accessible by stairs or, if you prefer, a lift. Arrope is a modern tasting-menu restaurant in Rueda where the chef, a Canary Islander who trained in serious kitchens, builds seasonal menus around local produce. The cellar belongs to the Yllera wine family, so the pairings are less of an afterthought than usual.
