The "Derrière" in the name isn't coy: this is the back half of Au Chasseur, where you sit facing an open kitchen and the chef runs a set gourmet menu while the front room does à la carte. The cooking leans hard into the region, lake fish and local walnuts and obscure Swiss producers, with a wine list to match. The 18th-century building gets a clean Scandinavian fit-out inside, which somehow works.
