Built from salvaged medieval stones on the instruction of a Guinness heir whose wife had a taste for the Gothic, this West Sussex hotel has had about a century to stop looking like a costume and start looking like itself. Rooms are scattered across the main house, cottages, and coach houses, all different, with four-posters and vaulted ceilings doing the heavy lifting. Thirty acres of parkland, a Norman chapel, and a beach nearby make it very good at romance.
