The name is literal: Björn Leist raises his own pasture-fed oxen and then cooks them beautifully in this wood-panelled, banquette-lined dining room tucked into the Rhön Mountains. The format is a single creative tasting menu that moves through themed chapters, each rooted in the Thuringian landscape around it. A Michelin star. The wine list leans firmly German, and the room runs warm and cosy enough that you stop noticing the time passing.
