Half an hour from the Byron Bay scene, this three-pavilion retreat sits deep in the shadow of Mount Koonyum, where the rainforest does most of the decorating. The architecture earns its keep too, built from reclaimed metal and timber, with poured concrete floors softened by vintage rugs and contemporary art on the walls. There's a magnesium pool for when wilderness feels like enough of a commute. Selected by the Michelin Guide.
