Deep in rural León, this is one of the world's great beef restaurants, and it earned that status the hard way: by raising its own oxen, ageing the meat for an almost unreasonable amount of time, and finishing it over wood fire in underground cellars that feel older than modern cooking trends. The crowd is pilgrims, basically, serious eaters who drove a long way on purpose. The chef often does the carving himself, which tells you everything about how personal this place is.
