  1. Floor-to-ceiling windows frame the Traunsee so perfectly it feels staged, but Bootshaus earns the distraction. It's a Michelin-starred fine dining restaurant on an Austrian lake peninsula, running five-to-seven course set menus built almost entirely around the Salzkammergut region. The chef weaves fermented notes and quiet Japanese influence through proudly local ingredients, with lake fish doing most of the heavy lifting. A basket of raw local produce arrives at the table, which is a nicer trick than it sounds.
