Brae

The farm came first, and the menu follows whatever it produces. Brae is a fine dining destination on a rural back road outside Birregurra, where the chef Dan Hunter, formerly of Mugaritz, runs an organic property with an olive grove and beehives and builds tasting menus around it. Six suites mean you can sleep off the whole endeavor. The kind of place that makes the drive feel like part of the plan.
