A tapas bar calling itself "the soul of an izakaya" in the middle of the Gothic Quarter, where the chef somehow also runs a farm outside the city that supplies the cheese, sobrasada, and wine. The result is Japanese technique landed on Mediterranean ingredients, served at the bar so you can watch it happen. It's small and tucked into one of those narrow streets where half the neighborhood seems to be a restaurant too.
