Nacho Manzano's family has been running this remote mountain restaurant in rural Asturias long enough that the siblings have settled into their roles as naturally as the surrounding hills. It holds three Michelin stars, which is an unusual thing to find down a country lane surrounded by cows. The cooking is rooted in the Cantabrian coast and the zero-mile larder around it, rendered in tasting menus that feel less like a meal and more like someone explaining where they're from.
