  1. A horseshoe counter wrapping a live kitchen is the whole setup here, one multi-course set menu, no decisions required. The chef spent time in Asia with Paul Pairet before landing in this old stone-walled building south of Perpignan, and the cooking reflects that restless background without showing off about it. Seasonal ingredients, careful technique, modern French in spirit if not always in flavor. A quietly confident dinner for people who like being cooked at rather than just fed.
