Carved stone fireplaces and ornate moldings fill the 18th-century bastide at the heart of this small luxury hotel outside Aix-en-Provence, where the estate's own organic vineyards press right up against the garden walls. Fourteen rooms split between the historic main house and the neighboring longères all run contemporary furniture against centuries-old bones. The Michelin Guide awarded it two Keys. A pool, a hammam, a spa, wine tastings, and a Michelin-starred restaurant round things out nicely.
