Château de Saulon

A château that has been standing since the 1400s, just outside Dijon, with exposed stone walls, pale oak bed frames, and patterned rugs that lean more country house than formal hotel. The 42 rooms look out over a pool, a park, two rivers, or kitchen gardens, depending on which one you get. The restaurant leans on Burgundy's larder, which in this part of France is not a modest claim.
