A converted 19th-century Synod Hall crouched under the Rock of Cashel is a pretty committed setting for a classic French-Irish restaurant, and Chez Hans has been here forever. The menu reads like a love letter to old-school cooking, sole meunière, proper puddings, the kind of thing people drive across Tipperary for. Staff who've worked here for years give the whole room the easy warmth of somewhere that has nothing left to prove.
