A Michelin-starred restaurant in Valdemoro, a half-hour south of Madrid, where two brothers run the room together, one cooking and one pouring. The chef works through the flavors of the Madrid region and La Mancha with a modern hand, drawing from the river valleys nearby without being precious about it. The drive out of the city feels intentional once you sit down.
