There are no stoves in this intimate restaurant inside the Iberostar Heritage Grand Mencey, which is either a statement of principle or a clever way to avoid washing pots. Rooted in the spirit of an old Canarian grocery, Colmado 1917 works entirely with raw technique: salted fish, tartares, marinades, cured meats, and local cheeses prepared to order for a room that seats, at most, ten people split between a bar and a single table.
