Coltivare
Piedmontese
The herb and spice garden outside feeds the kitchen directly, and the kitchen belongs to the Brandini wine estate, so the terroir argument runs from the glass to the plate. This is a contemporary Piedmontese restaurant where the cooking stays close to the Langhe, digging into local Fassona beef and hyperlocal aromatics. A vegetarian menu runs alongside the main one. Large windows frame the vineyards, and on cold days the fireplace does its part.
