James Syhabout's two-Michelin-star tasting menu restaurant on Piedmont Avenue runs calm and unhurried, which is its own kind of trick on a street that packed. The room is long and spare, servers wear ties and crumb your table, and the food draws quietly on his Thai and Chinese heritage without announcing it. That slow-poached egg yolk has become a regular's religion. Cool and relaxed, but never, as the room itself seems to know, actually casual.
