Converso sits inside a converted Cistercian monastery, which sets a certain tone before you've even looked at the menu. This is a tasting-menu restaurant where the chef builds contemporary Castilian cooking from hyper-local ingredients: garden vegetables, truffles from down the road, honey from the next town over. The room has an open kitchen and the kind of quiet that old stone walls tend to enforce. Two menus to choose from, both serious in ambition.
