    Every dish on the multi-course tasting menu at this Caracas restaurant is built around a single animal: lamb, from chop to cheese to marrow, sourced from a partner sheep farm half an hour outside the city. The chef returned to Venezuela after years cooking in Europe and the Middle East, fell for a local farm, and designed a whole restaurant around it. Cordero ranks at number 29 on Latin America's 50 Best Restaurants list.
