    A restaurant on a pedestrian street threading through Zamora's old Romanesque quarter, Cuzeo runs a rustic-modern dining room with an à la carte and a tasting menu built around regional ingredients taken seriously. Game from the Sierra de la Culebra, chickpeas from Fuentesaúco, the kind of provenance that sounds like homework but tastes like someone actually cares. The kimchi croquettes are popular enough that ordering them feels less like a choice than an obligation.
