    A family trattoria in the Piedmontese hills where the weekly menu changes to follow the season rather than the other way around. Fausto runs the room, his wife Rosella cooks, and daughter Gaia handles dessert, so the agnolotti and the fiordilatte ice cream come from people who have opinions about them. The wine list leans on the family's own Pinot Nero. A Michelin Bib Gourmand, and the kind of place that earns one quietly.
