The dining room inside a stately Frisian country estate, with marble fireplace, high ceilings, and a chandelier that means business. Chef Seb Smit runs a Michelin-starred French kitchen where local produce meets seasonings from considerably further afield, sauces and marinades doing quiet, careful work on every plate. The terrace looks out over golf greens, which sets the register pretty clearly. Dress accordingly.
