An old Dutch farmhouse outside Amsterdam that became a Michelin-starred French restaurant, De Moerbei has spent decades doing the same thing without apology: sourcing serious local produce and treating it with classical French technique. The chef's thing is North Sea fish and intense sauces, nudged occasionally by Japanese or other global touches. Frank de Haas runs the wine side with equal seriousness. Dress up a little.
