A domed ceiling of lime and stone sets the room in Carovigno's old town, once you've threaded through the lanes to find it. This is a Michelin-starred trattoria-ish dining room where the chef runs modern Apulian cooking on good instincts and serious local ingredients. In summer, a terrace opens up over the rooftops with a sliver of sea beyond. The wine list pulls from Puglia and well past it.
