A 16th-century bastide tucked into 37 acres of parkland just outside Saint-Rémy, this 19-room luxury hotel is the work of the Fontenille group, whose country properties set a high bar in France. The gardens were designed by the architect's mother, which tells you something about the level of personal investment. No restaurant, but breakfast is served daily, the estate's own wines are poured, and the whole of Saint-Rémy is minutes away when the pool loses its appeal.
