A 39-room luxury hotel less than an hour west of Paris, housed in an 18th-century Directoire château that was a private home until recently, which explains why it doesn't feel like a hotel. The estate straddles the Eure river, grows produce for its own gastronomic restaurant, and holds France's first Susanne Kaufmann spa. A bistro on a terrace among fruit trees handles the lighter end. Horseback riding, hiking, and a nearby golf course fill the rest. The Michelin Guide awarded it one Key.
