The estate raises its own Wagyu, keeps chickens, and grows the fruit and vegetables, so the kitchen barely needs to leave the grounds before going somewhere unexpected, like sea bream ceviche or scallop gyoza. It's a countryside restaurant in Burgundy, stone walls and a beamed ceiling and a fire going in a hearth big enough to mean it. The wine list runs deep, which, given the address, is the polite way to put it.
