A traditional Spanish restaurant in the quiet Castilian town of Alba de Tormes, where the chef comes out of the kitchen to present many of the dishes himself, which keeps things from feeling too formal. The à la carte leans into seasonal, regional cooking, while two tasting menus cover opposite ends of the spectrum: one rooted in memory and tradition, the other more personal and experimental, available with advance booking.
