  1. The former stables of a medieval castle on a vast private estate have been converted into a Michelin-starred dining room where old stone and contemporary furniture share the same wall. The kitchen leans hard on the estate's own garden, so the menu shifts with what's growing nearby, alongside some quietly confident classical work. When the weather holds, the terrace makes the whole thing feel slightly unreal.
