You book a ticket the way you'd book a theme park ride, choose your eight-course menu online, and arrive to be seated in a floating chair that ferries you through a sequence of theatrical rooms. Each one has its own atmosphere and matching course, and the whole choreographed procession lasts about two hours. Peter Hagen-Wiest directs the kitchen, and the cooking holds a Michelin star, so the spectacle has genuine ambition behind it.
