The chickpea stew on the menu was created to honor the restaurant's founder, and it's still there decades later. El Rinconcico is a traditional dining room above a ground-floor gastro-bar in the medieval village of Mora de Rubielos, drawing on Teruel province's larder, including its celebrated black truffle, with a few Peruvian touches folded quietly into the mix. It holds a Michelin Bib Gourmand.
