Minoli De Silva, a MasterChef Australia contestant, runs this Sri Lankan restaurant tucked into a quiet corner of Darwin's CBD. The cooking pulls from the Hill Country and pushes outward from there, folding Sri Lankan technique into whatever local produce catches the kitchen's attention. The room runs on warm, unhurried hospitality, and the Australian Good Food Guide gave it a One Chef Hat. Darwin is an unlikely home for food this particular, which is exactly the point.
